Lifted lime and fresh mint peas on the nose. A core of lime and passionfruit on the palate with a clean mineral finish. Hand picked in the early morning to retain freshness. The majority fermented in chilled stainless to retain fruit and aromatics with a small barrel portion to add complexity and palate weight.
